Hatsukokoro Ginyo Ginsan Damascus 180mm Santoku

Description

This beautiful 180mm santoku features a stunning Damascus pattern; it is long and thin, making its shape closer to a Gyuto. It's finished with a mirror polish, a walnut and a black buffalo horn Wa handle. 

Ginyo by Yoshihiro Yauji exemplifies elegant design and traditional craftsmanship, resulting in a beautifully handmade stainless steel knife. Unlike other knife-makers, Yauji-san does everything himself: forging, grinding, finishing, and sharpening. The Damascus stainless cladding has a stunning pattern with very tight layering made by folding the steel many times during forging. Constructed using the traditional San Mai technique using Ginsan Stainless Steel core, which contains a high carbon content (1%) and 13% chromium, providing the best of both worlds. Its performance is similar to Shirogami #2, resulting in excellent sharpness & edge retention with the added benefit of being corrosion-resistant and easy to sharpen.

Hatsukokoro (初心)

Yoshihiro Yauji (弥氏 良寛)

In 2003, Yauji-san became a blacksmith apprentice of Master Hideo Kitaoka, considered one of Japan's best artisans from the Takefu Knife Village. After over 15 years of training, Yauji-san started making knives independently in 2019. It's worth noting that he does forging, grinding, finishing, and sharpening all by himself.

Santoku

Santoku means 'Three Virtues' or 'To Solve Three Problems' in Japanese and is designed for versatility in the kitchen. This is also a multi-purpose knife with a slight vegetable bias for slicing, dicing, and mincing.

San Mai

San Mai, which means "three layers," is a Japanese technique of constructing blade steel. A San Mai knife has a core layer of hard, high-carbon steel sandwiched between two layers of softer steel.

Ginsan (Gin3 or Silver #3)

Ginsan steel, also known as Silver #3, is a high-quality stainless steel designed by Hitachi Metals. Its sharp edges and edge retention resemble many high-carbon steels, like Shirogami #2. Its composition includes 0.95-1.10% Carbon (C), 13.00-14.50% Chromium (Cr), 0.60-1.00% Manganese (Mn), 0.35% Silicon (Si), 0.03% Phosphorus (P), and 0.02% Sulfur (S).
