Description

A shimmering Damascus wave, hammered tsuchime pockets, and a mirror-polished heel give this 180mm Santoku the look of liquid steel in motion. The slender, slightly taller profile glides like a small gyuto while the lightweight octagonal walnut handle with black buffalo-horn ferrule locks comfortably into your pinch grip. Hand-sharpened to a screaming edge, it is ready to julienne vegetables, portion proteins, and mince aromatics straight out of the box.

Ginyo by Yoshihiro Yauji showcases single-smith artistry at its finest. Yauji-san forges, heat-treats, grinds, polishes, and hones every blade himself, folding the stainless cladding again and again to create the tight Damascus pattern before marrying it to the razor-hard Ginsan core. The result is a hand-forged Japanese knife with laser-like cutting feel, excellent edge retention, and day-to-day stain resistance.

Hatsukokoro 初心 is H&K’s house label based in Amagasaki. By collaborating with master blacksmiths across Japan, the brand keeps regional forging traditions alive while delivering a wide range of premium Japanese knives to cooks worldwide.

Yoshihiro Yauji 弥氏 良寛 apprenticed under legendary smith Hideo Kitaoka in Takefu Knife Village from 2003. After more than fifteen years of rigorous training, he launched his own workshop in 2019, quickly earning respect for his meticulous finishing and effortlessly thin grinds.

Santoku 三徳 means "three virtues." Some say this refers to three types of food — meat, vegetables, and fish — while others say it means three cutting techniques: slicing, dicing, and mincing. Either way, this all-purpose knife with its shorter, taller blade than a gyuto is an all-time favorite for agile prep work and efficient chopping.

San Mai 三枚 means "three layers" — a hard cutting core sandwiched between two softer outer layers. This traditional construction protects the delicate edge from shock while adding toughness and simplifying maintenance, so you can enjoy the performance of high-carbon steel worry-free.

Ginsan 銀三 (Silver No. 3) was created to make knives that would sharpen and cut like carbon steel but with none of the maintenance. The composition is very pure compared to other steels, containing mostly just iron, carbon (0.95 – 1.1%), and chromium (13 – 14.5%), plus minimal silicon (≤ 0.35%) and manganese (0.6 – 1%). This purity allows it to sharpen easily and take a crisp edge like carbon steels, while all that chromium means Ginsan is unlikely to rust.
