K Sabatier Nogent 7" Carbon Chef: Bubinga Handle

Description

These blades were forged in Theirs, France, between the 1950s and 70s and were reassembled recently from old stock. The handle is made from a solid piece of Bubinga, aka African Rosewood, capped with a round steel ferrule and Forged from traditional, simple carbon steel like XC75 (1075)

K Sabatier is an 8th generation family-owned manufacturer of forged knives since 1810 from Thiers in Auvergne Rhône-Alpes, France.

Nogent

Nogent-style knives are characterized by their one-piece wood handles, which have a pin-through tang and round steel or aluminum ferrule. They are thin and light with small bolsters. 'Cuisine Massive' was used to describe the style of Thiers, as Nogent was a rival knife-making city.

Simple Carbon Steels

Simple Carbon Steels are steel alloys with few additives to the Iron; for example, 1095 is comprised of only 5 elements: 98% Iron, .9% Carbon, and trace amounts of Phosphorous, Manganese, and Sulfur.
