Kurouchi by the Tokaji family is free-forged in the mountains of Shikoku using the age-old hammer-and-anvil methods that made Tosa steel famous. The blade is built san-mai style: a hard Aogami Super (AS/S) core for outstanding edge retention is wrapped in softer iron that absorbs shock and makes sharpening on whetstones a joy.

Tosa Tsukasa 土佐司 has spent generations preserving the smithing heritage of the Tosa region. Tokaji Tsukasa 徳治司 is a highly skilled blacksmith from Kōchi, Japan, who has devoted himself to the art of knife making under the mentorship of renowned blacksmith Tadayoshi Tokaji. With years of experience in traditional free forging techniques, Tsukasa creates exceptional knives using Shirogami carbon steel and laminating them with soft iron. Sujihiki translates to “flesh slicer.” Its long, narrow silhouette is purpose-built for carving proteins in smooth, single strokes, reducing cell damage and keeping juices where they belong—inside the meat.

With more carbon (1.4 – 1.5%) plus silicon (0.1 – 0.2%), manganese (0.2 – 0.3%), chromium (0.3 – 0.5%), tungsten (2 – 2.5%), and vanadium (0.3 – 0.5%), this Hitachi flagship gets harder and stays sharp longer. Extra chromium slows rusting while vanadium increases toughness and reduces chipping.
