Forged from a single billet of 52100 carbon steel, the Euroline Carbon 2.0 8" chef’s knife pairs a silky satin blade with a broad, gently curved profile for effortless rock-chopping and superior knuckle clearance. Each knife is ground and hand-sharpened in Seki, Japan to a razor-keen 9–12° per side, then mated to a hand-contoured black Micarta handle anchored by brass rivets and Bob Kramer’s signature mosaic pin. A tapered full tang and subtly rounded spine lend perfect balance and all-day comfort.

Euroline Carbon 2.0 by Bob Kramer distills the master bladesmith’s decades of experience into a monosteel workhorse that marries American carbon steel with Japanese finishing. The 52100 alloy is heat-treated to 61 HRC for remarkable edge life, yet remains easy to hone and strop back to hair-popping sharpness.

52100 Carbon Steel Originally developed for ball bearings, 52100’s ultra-fine grain structure sharpens to an exceptionally keen edge and develops a protective blue-grey patina over time. Its approximate composition is 1.0 % C, 1.4 % Cr, 0.3 % Si, and 0.45 % Mn, delivering a sweet spot of toughness, edge retention, and sharpenability.
